Capcicum-Eggpalnt-Potato Curry/Alu-Bengan-Capsicum Curry

Ingredients:

Egg Plant/ Brinjal -- 5
Potato----2
Capsicum -----2
Red chilli powder---1/2 Tsp
Pea nuts ------1/4 cup
Sesame seeds----1/4 Tsp
Salt----enough
Seasoning --1/4 tsp each
(Urad dal,Channa dal,Mustard seeds Cumin seeds,Asafoetida )

Procedure:

1.Dry fry peanuts and sesame seeds and grind to powder.

2.Chop egg plant/Brinjal, capsicum and potatoes to pieces.

3.Heat 2 to 3 tsp of oil and prepare seasoning.

4.When mustard seeds splatters, add asafoetida and potato pieces.

5.Once the potatoes are half-cooked, add egg plant / brinjal pieces and capsicum pieces and cover with lid. Let the vegetables get cooked.

6.Add Peanut – sesame seed powder to the cooked curry.

7.Add chopped curry leaves and coriander leaves. Turn off the flame.

Delicious Bengan Alu Capsicum curry is ready to eat. Eat with roti or rice and Enjoy.
