Stuffed Eggplant Curry(Gutti Vankaya Curry)


Eggplant --- 6
Urad dal - 1/4 cup
Channa dal - 1/4 cup
Peanuts - 1 cup
Sesame seeds - 1cup
Coconut powder- 1/4 cup
Red chillis - 14
Coriander seeds- 2 sp
Tamarind - Amla size


1.Sesame seeds,peanuts have to be fried seperately.

2.In 1/2 tsp oil, fry tamarind,urad dal, channa dal,red chillis,methi seeds,coriander seeds. Grind all these Ingredients.

Then, add fried sesame seeds,peanuts and make powder.(If you add sesame seeds and peanuts,it makes the powder oily and lumps)

Procedure for Curry:

1.Wash the Egg plants well.

2.Cut the egg plants in plus shape (+)

3.On the top semi-cirle area (not at green the stem) to the half the lengh of the egg plant.

4.Add little salt and oil to the grinded powder and stuff the powder into all the egg plants and keep then ready to fry.

5.In a flat pan, take some oil and add urad dal,channa dal,mustard seeds zeera and hing. Add curry leaves andlittle turmaric powder too.

6. When the seasoning splatters, arrange the stuffed eggplants carefully in the hot oil. close the pan with a plat and put some water on the plate.(It helps the eggplants not to burn but cook well)

7.Try to change the eggplant possition delicately,to make it cooked from all the sides.

8.Once the eggplants are cooked, add the leftover powder on the eggplants and add little salt.

Delicious Eggplant curry(Gutti vankaya kura) is ready. Eat with hot rice.
