Vada Pappu / Kosambari / Pesara Pappu

Ingredients: (for 4 people)

Moong dal ------------ 1cup
Cucumber / Keera -- 1 medium size
Carrot--------------------1 medium size
Grated coconut-------1/2 cup
Green chillis------------2
coriander leaves / cilantro--- ¼ bunch
Ginger ------------------1/4 inch
Salt-----------------------1 tsp

Seasoning: Oil -------- 1Tsp
Urad dal, Cumin seeds, Mustard seeds - ¼ tsp each.
Asafoetida (Hing) - - Pinch

Procedure:

1.Soak moong dal for 30 minutes and drain out all the water.

2.Peel out the skin for cucumber and chop into fine pieces. (Do not grate cucumber, it will ooze lot of water)

3.Grate carrots.

4.Chop ginger coriander leaves / cilantro finely.

5.Chop green chillis into big pieces ( so that who doesn’t like spice, can take them out easily)

6.Grate fresh coconut and keep it ready.

7.In a vessel, mix soaked moong dal, chopped cucumber, ginger, coriander leaves, green chillis, and grated carrots and coconut.

8.Add seasoning to moong dal mix.

9.Add salt before serving. (If you add salt with rest of the ingredients, it will make the vegetables ooze water)

Kosambari / Vada Pappu is ready.
