Mint Pickle (pudhina pickle)

Procedure:
1.Clean Mint by cutting root stems wash carefullly make sure no dirt.
2. Take a Towel and spread evenly, let it dry for over night.
3. Roast Sesame seeds on a medium heat almost like red color.
4.Take 4 tsp oil in a pan fry Red chillies, methi seeds, mustard seeds in low medium heat until it they fry red in color add Hing to it.
5.Fry Mint with 2 Tsp of oil,in low medium heat, stir well until it fries in the oil for 5 minutes.
6. Take Tamarind separate nicely and mix with fried Mint evenly, let it cool for 15 minutes.
7.Grind sesame seeds coarse and take it in a bowl
8.Grind red chillies, Methi seeds, mustard seeds very fine with salt and turmeric.
9.Add Fried Mint,Tamarind to the grounded powder very slowly until it comes to nice consistancy.
10.Take a bowl place the pickle, for more garnishing can add more oil,red chillies.
Thats it hot hot Mint Pickle ready.
