Lemon Rice with grated coconut (Chitrannam)

 Lemon Rice with Coconut

Ingredients:

Cooked rice -- 2 Cups
Lemons        --  3
Mustard seeds -- 1/4 tsp
Green chillis -- 4 to 6
Grated coconut ---2Tsp
Ginger           -- 1 Inch
Salt               -- enough
Turmeric powder --1/4 tsp
Cashew nuts  -- 10 to 15
Peanuts       -- 2 Tsp
Curry leaves -- 4-5 leaves
Coriander leaves -- 4-5 leaves

Grind: fresh grated coconut, green chillis, ginger and mustard seeds into coarse paste.

Procedure:

1.Cook enough rice and keep it ready.
2. In a pan, take 1 Serving spoon of oil, when the oil heats up, add the seasoning items like Channadal, Urad dal,Cumin seeds, mustard seeds and peanuts. Wait for 30 seconds and add cashew nuts cut green chillis, ginger pieces,curry leaves and Hing.
3.Add grounded coconut ginger chilli mustard seeds paste, to the rice.
4.Add the seasong to the cooked rice and add turmeric powder too.
4. Now add salt and freshly squeezed lemon juice and mix well.
5. Leave the rice covered with lid for 30 minutes. It allows the rice get the coconut,ginger and mustard smell.

Yummy Yummy Chitrannam ( Lemon rice) is ready.
