Vegetable Pulav

Ingredients: Basmathi rice -- 3 cups |
Procedure:
1. Cleanly wash the basmathi rice and soak it for 30 mins
2. Wash all the vegetables and cut them into 1 inch pieces.
3. In a pan, take oil and ghee together and heat it.
4. Put cinnamon,cordomom,cloves,bayleaves and javetri and fry them well.
5. Add chopped onions and fry for a while.
6. Add ginger garlic paste and fry well.
7. Add all the vegetables and fry together.
8. Add chopped mint and cinlantro and fry for a while.
9. Add coriander powder, cumin powder and little garam masala powder and cook for a while.
10. Add this mixture to soaked and drained rice.
11. Mesure enough water to rice into an empty vessel. ( cup basmathi rice needs 1 and 1/2 cup of water)
12. Take out 1/2 cup of water from the vessel and add remaining water to the rice mixture. (Because the vegetables contail some moisture and it allows to cook the rice very dry)
13. Add enough salt and pressure cook or openly cook the rice.
14. Add little safrom water ( May be one Tspoon) to the rice, once the rice is almost done.

Mouth Water tasty vegetable pulav is ready. Eat with raita and enjoy.
