Coriander Mint pulav

Coriander-Mint  Pulav 

 

Ingredients:

Basmati rice----- 3 cups
Coriander leaves ------1 cup
Mint leaves-------1 cup
Grated coconut-----1/2 cup
Ginger garlic paste---1 Tsp
Soamp -----1 tsp
Green chillis-----4 to 6
Salt-----enough
Seasoning:
Oil-----1 tsp
Ghee------1Tsp
Cloves----3
Cinnamon pieces---3
Cardamom ----3
Bay leaves-----3
Vegetables:
Peas------1/4 cup
Carrot peaces ----1/4 cup
Potato-----1 medium
Oinion -----1 medium.

Procedure: 

1.Wash mint and coriander leaves and all the vegetables.

2.In a jar, take mint, coriander leaves, green chillis, soamp and grated coconut. Blend it to fine paste.

3.Chop, onions, potatoes, carrots into small pieces.

4.In a pan heat oil and ghee together. Add cloves, cinnamon pieces, cardamom pieces and bay leaves.  Add ginger garlic paste and fry well.

5.Add chopped onions and fry for a minute. Add chopped potatoes, carrots and peas.

6.Add grounded coriander-mint paste and fry all together.

7.Wash basmati rice well and add basmati rice to the masala and fry for 2 mintures. Add one cup of water and fry well.

8.Transfer all the mixture to electric cooker or pressure cooker. Add 3 more cups of water. Add enough salt and cook the rice for 2 whistles.

9.For 3 cups of basmati rice, 41/2 cups of water is needed. As vegetables also have some moisture, we add ½ cup water less. So that rice will not become get mashed. 

Delicious Mint – Coriander Pulav is ready.  Eat along with raita.
