Kesar Burphy

Ingredients: Soji ---------------1 cup |
Procedure:
1.In a pan, fry soji with 1 Tsp of ghee until the raw smell is gone.
2.Mix sugar to soji and keep aside
3.Apply ghee to a plate and keep aside.
4.Take 2 Tsp of ghee in a pan and fry cashew nuts and raisins.
5.Once cashew nuts turn into golden color, add 2 cups of water or milk and let it boil.
6.Add a pinch of kesar color or saffron to the boiling water or milk.(This is optional, only if you want color )
7.Once the water or milk get to boil, add soji – sugar mix to it and mix well to avoid lumps.
8.Add one more table spoon of ghee when soji get cooked well with milk or water looks like halwa.
9. Transfer hot halwa on to greased plate and pat it uniformly to make it level.
10.Cut the Kesar Burfi into your desired shapes ( square, rectangles or diamonds). And let it cool down.
Delicious Kesar Burfi is ready.
