Vegetable Upma

Ingredients:

Roasted Upma rava  or  Soji -------2 cups
Salt ------------------------------2 tsp or enough
Onion ---------------------------1 medium size
Ginger --------------------------1 inch
Green chillis ------------------2 to 4
Tomato ------------------------1 medium size
Carrots ------------------------1 medium
Green peas -------------------1/2 cup
Potato --------------------------1 medium size
Curry leaves -------------- 5 to 10 counts
Coriander leaves -------- ¼ bunch 

Seasoning Items:
Oil ------------ 2 Tsp
Channa dal  - ½ tsp
Urad dal – ½ tsp
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Cashew Nuts – 1 Tsp

Procedure:

1.Dry roast , upma rava or soji ( if it is roasted upma rava, no need to roast again) until the raw smell is gone.
2.Chop, onion, ginger, green chillis, carrots , tomatos and potatos into small pieces.
3.Take a thick bottom pan  and heat 2 Tsp of oil. Once the oil is hot, put all the seasoning items and fry them to golden brown color.
4.When the mustard seeds splatters, add chopped  vegetables and curry leaves to it and fry them until onion are trasperant.
5.Add 4 cup of water to the vegetable mixture and add salt and chopped coriander leaves.
6.Cover the pan with a lid and wait 10 mins, until you see boiling water with bubbles.
7.Add roasted upma rava or roasted soji to the boiling water. While adding the rava to water, keep mixing the rava immediately in the boiling water to avoid lumps.
8.Cover  the upma with lid and wait 5 more mins until all the added rava get cooked.
9.Open the lid and mix the upma upside down and make sure there are no lumps.
10.Cover Upma with lid for 2 more mins and turn off the flame.
Hot hot yummy yummy Upma is ready.

Hint:This upma is very healthy, as it has very little oil and lot of vegetables. Wheat  has lot of fiber init and good for health.
