Soji Vermicelli Upma

 

Ingredients:

Bambino Vermicelli – 1cup
Soji-----1 cup
Onion ---1 medium
Ginger ---2 Inches
Green chillis—3 to 5
Oil-------1 Tsp
Ghee----1 Tsp
Curry leaves – 1 string
Coriander leaves –2 strings
Turmeric powder- ½ tsp
Seasoning items – ¼ sp each
(Channa dal, Urad dal, Cumin seeds, Mustard seeds)

Procedure:

1.In a pan, heat ghee and fry soji and vermicelli until golden brown color and keep aside.

2.Chop onion, green chillis and ginger into small pieces.

3.In a pan, heat oil and prepare seasoning with all seasoning items.

4.Add chopped onion, green chillis, ginger pieces and fry until onion turns to golden brown color.

5.Add chopped curry leaves, coriander leaves, and Turmeric powder.

6.Add 4 cups of water ( 2 cups of water for each 1 cup of vermicelli) and let it boil.

7.Add enough salt.

8.Add fried soji and vermicelli mix and mix well. Cover with lid for 3 to 5 minutes and let vermicelli get cooked.

9.Take off the lid and let upma get cooked for 5 more minutes.

10.Turn off the stove, when upma is little watery. (Water get absorbed later as well and gets to perfect consistency).

Soji-Vermicelli Upma is ready.
