Vangibath

Ingredients:

Rice --- 1 cup ( cook and keep it ready)
Egg Plants --- 5
Cloves        --- 2
Cinnamon   --- 2
Vangibath powder  ---  3 Tsp
Salt --- enough
Turmaric --- 1 pinch
Cashew nuts --- 10
Oil  --- 1/4 serving spoon
curry leaves --- 5 or 6
Coriander leaves
Seasoning items:Urad dal, Channa dal, Mustard seeds, Cumin seeds

Procedure:

1. Wash the Eggplants and cut them into long pieces..
2. Take some oil in a pan. Once the oil heated, put all the seasoning items along with cloves, cinnamon and Turmaric powder.
3. When the Mustard seeds splatters, add the cut eggplant pieces and fry them until they are soft.
4. Add salt,vangibath powder and curry leaves and fry for a while.
5. Add the cooked eggplants to the rice and mix well.
6. Add fried cashew nuts to the rice.
